What is a tigernut? Well, it isn’t a nut, as the name might imply. This superfood is a small root vegetable that grows in Northern Africa and the Mediterranean. Tigernut flour is naturally gluten free and Paleo. It is high in iron, prebiotic fiber, and potassium.  Tigernut flour is a great alternative to those allergic to nuts when baking or cooking. Ours comes from Spain. It is naturally sweet, so less panela is needed!

Almond flour is made from ground almonds.

The process involves blanching almonds in boiling water to remove the skins, then grinding and sifting them into a fine flour. Almond flour is incredibly nutritious. It is particularly rich in vitamin E and magnesium.

Coconut oil, or copra oil, is an edible oil extracted from the kernel or meat of mature coconuts harvested from the coconut palm. Coconut oil is known for its healthy fatty acids, such as MCT’s. The company we use is committed to the non-GMO and Fair Trade movement.

Vanilla extract is a solution made by macerating and percolating vanilla pods in a solution of ethanol and water. Our vanilla comes from organically grown beans from Madagascar. No corn is used to process the extract.

A natural bulk-forming fiber, Psyllium Husk powder can help keep things moving, which plays an important role in digestion and colon health. It replaces xanthan gum to help hold the dough together.

Panela is a raw, unrefined cane sugar. Ours is hand cut, hand kettled, hand crafted. That means no industrial collection or processing. It has been traditionally handmade for centuries by dehydrating raw sugarcane juice over low heat. Because it is made in such a simple way, it retains the flavorful and nutrient rich molasses from sugarcane. Our Himalayn pink sea salt is produced through evaporation of ocean water or water from saltwater lakes, usually with little processing. Depending on the water source, this leaves behind certain trace minerals and elements. The minerals add flavor and color to sea salt, which also comes in a variety of coarseness levels.
